Cowboy Steak
Serve the steaks with baked potatoes and a home-style green salad topped with a range of crisp raw vegetables all dressed with blue cheese dressing.
Preparation time: 10 minutes    
Cooking time: minutes   
Makes: 2 servings  
1 tsp ground cumin
1/2 tsp dried thyme
1/2 tsp cayenne pepper
1/4 tsp garlic powder
•    coarsely cracked pepper to taste
•    coarse sea salt to taste
2 (10-12 oz.) beef rib steaks
1 Tbsp extra olive oil
Combine the first 6 ingredients in a small bowl. Brush the steaks with the oil and place on a plate. Sprinkle and rub with the spice mixture. Let steaks warm at room temperature at least 10 minutes. Preheat your grill to medium-high. Grill the steaks to desired doneness, allow approximately 2-3 minutes per side for rare; 3-4 minutes for medium-rare; and 4-5 minutes for medium to well.
