Shrimp Caesars
Here’s a tasty cocktail and an appetizer all in one glass.
Preparation time: 10 minutes
Cooking time: 2-3 minutes
Makes: 4 servings

8 raw, large shrimp                                                                  
6 oz. (175 mL) vodka    
•    dashes     Worcestershire and hot pepper sauce
•    freshly ground black pepper    to taste
24 oz. (750 mL) clamato juice    
4 small celery stalks with leaves
4 lemon or lime wedges    

Cook the shrimp in a pot of lightly salted boiling water until just cooked, about 2-3 minutes. Drain, place in ice-cold water to chill, and then drain well. Peel the shrimp, leaving the tip of the tail attached. Devein, if desired.
Fill 4 tall glasses 1/2 full with ice cubes. Divide the vodka among the glasses, and then add the Worcestershire, hot pepper sauce and black pepper. Pour in the clamato juice. Garnish each drink with a celery stalk and lemon or lime wedge. Hook 2 shrimp on the rim of each glass and serve.
Eric’s options: Before filling each glass, dip the rims of them in cold water and then in celery salt. Make shrimp bloody Mary’s by replacing the clamato juice with tomato juice.
