Tender and Tasty Braised and Barbecued Ribs
For a classic summer meal, serve the ribs with corn on the cob and potato salad.
Preparation time: 10 minutes
Cooking time: 1 3/4 to 2 hours
Makes: 4 servings
2 large racks pork back ribs, each cut into 2 or 3 ribs pieces
1 1/2 cups unsweetened apple juice or lager beer
Salt and freshly ground black pepper to taste
1-2 tsp (10 mL) ground cumin
1-2 tsp (10 mL) chili powder
1-2 tsp (5 mL) oregano
Your favourite barbecue sauce, to taste
Preheat oven to 325°F (160°C). Set the ribs meaty side up in a shallow sided roasting pan or baking pan. Sprinkle and rub ribs with salt, pepper, cumin and chili powder. Pour in the apple juice or beer. Cover and bake the ribs 90 to 105 minutes, or until tender.
Heat your barbeque to medium, medium-high heat. Set on ribs and cook on both sides until a nice colour is achieved. Set the ribs meaty side up, brush with barbeque sauce, let the sauce heat through a few minutes, and the ribs are ready.
